Cenci, fried dough strips sprinkled with sugar

Cenci are one of the traditional pastry desserts enjoyed exclusively during the carnival period.

 

While schiacciata is a soft yellow sponge cake, cenci are small, flat pieces of pastry dough that are fried and then topped with confectioners sugar.

 

The name actually comes from the Florentine dialect for rag or mop, because of their irregular and crumpled appearance.
