Tuscan Bread & Salt
A curiosity of traditional Tuscan bread is that it is unsalted, which comes as a shock the first time you try it!
The reason for this is that in the past, the Florentine Government placed a tax on salt.
The bakers of the city, to maintain cheap bread prices, left out this ingredient.
Tuscans are proud of their unsalted bread.
It is perfect as a scarpetta (little shoe) for mopping up the last of the sauce on one’s plate, or simply with fresh olive oil and a sprinkling of salt.
