Bread of Altopascio
Altopascio, a small town about 21km from Lucca is known as ‘Città del Pane’ – ‘Bread City’.
The bread from Altopascio has become traditional thanks to the manual ability and talent of the people whose experience has created this special bread with its distinctive taste.
The water of the area has also played its part.
Altopascio bread comes in two forms, a square loaf (bozza) and a long loaf (filone), it’s soft inside with a golden crust.
It is unsalted and is sold in loaves of 500g to 2kg.
Altopascio has been known as a bread city since its early days when it was necessary to offer assistance to the pilgrims who visited the various religious sites along the Via Francigena.
The name derives from the germanic Teutpasio which local dialect and pronunciation, alto, passo e pascere, changed to the current form.
