Vinsanto is an amber colored sweet wine, originally produced for use during religious services.
However, being too good to taste just once a week in church, it found its way onto our tables! Its noble spirit sparks unforgettable moments and is best enjoyed after dinner with friends.
Vinsanto is customarily served as a dessert with cantuccini, the Florentine name for these particular biscotti, which are perfect for dipping.
Made from a combination of Trebbiano, Malvasia, Cannaiolo Bianca and San Colombano, the ripest clusters of grapes are hung on racks in a ventilated room for several weeks, where they loose water and concentrate their flavour.
In January the grapes are pressed, and the liquid obtained is submitted to warm and cold fermentations, before being preserved in small oak barrels for three to four years of ageing.
The brilliant amber wine is at least 15% alcohol, elegant and sweet on the palate, and the precious product ages and refines indefinitely in its bottle.
