Colonnata Lard
This is Colonnata’s claim to fame; once it was part of quarry workers’ lunch boxes.
It would have been prepared in the morning together with a flask of wine, to ensure the necessary calories for the steep slopes and hard work in the quarry.
Lardo di Colonnata owes its wonderful flavour to the seasoning, which takes place in marble vats.
