Dried mushrooms (funghi porcini essiccati):
The drying process follows tradition and once dried they are placed in hermetically sealed jars or in bags together with peppercorns.
Mushrooms in olive oil (porcini sott’olio): the mushrooms are washed by hand, cut into pieces and ‘cooked’
in vinegar and salt. They are then put into jars and covered with extra virgin olive oil.
