Mushrooms in Olive Oil
The mushrooms are washed by hand, cut into pieces and ‘cooked’ in vinegar and salt.
They are then put into jars and covered with extra virgin olive oil.
Nobody knows for sure how many are produced each year as the country people who gather them keep secret where they can be found.
