Tart with Chocolate, Sultanas, Candied Peel and Pine Nuts
Torta co’ bischeri is a tart made with flan pastry.
It is round and dark in colour as it uses chocolate in place of jam. The pastry is rolled out and placed in a flan tin and filled with the above mixture.
Sometimes the filling is covered with a pastry top.
This tart is typical of the area of Pisa because of its unique combination of ingredients and the traditional method of preparation.
The pinoli used in the recipe come from the Migliarino San Rossore Park and the cake is traditionally eaten during the festivities for the Ascension.
