ZAFFERANO
Saffron
San Gimignano is famous for its productionof zafferano (saffron).
In the fall, alongside the vines the purple petalsof these flowers are clearly visible.
The petals are gathered early in the morning before theflower is open and the fragrance has been dispersed.
The three stigmas from every plant are dried over fires of larch wood at a temperature of not more than 40°C and then packaged.
120 - 140 flowers produce only one gram of saffron.
