Pine nuts are the kernels of the seeds that fall from the mature pinecones and are often used in cake making and as flavouring in many of the regional recipes.
In Tuscany the woody shells are used to add fragrance to the fires for barbecues.
The pine nuts from the Migliorino San Rossore Park are renowned as being produced organically and for the traditional methods employed in drying the cones with ancient machinery and then working the kernels by hand.
These organic pine nuts are popular in Italy and overseas and for this reason the Park management is doing everything possible to preserve these precious pines from decay.
