Grated pecorino is good on ribollita, some pasta dishes and to add flavour to certain meat dishes.
Slices of pecorino go very well with honey, fruit conserves and fresh fruit and vegetables.
Soft Pecorino Toscano needs a white wine such as Bianco di Pitigliano or Monteregio Bianco while a mature cheese wants a red wine like Morellino di Scansano, Chianti Classico, Montecucco Rosso or, if the cheese has been matured for over 8 months, Brunello di Montalcino.
Try also soft Pecorino with fava beans. Dip the raw beans in salt and eat them together with pecorino cheese.
