Mortadella di Prato is a typical product of this Tuscan city.
It’s origins go back a long way to when it was a poor man’s salame, made from the meat that wasn’t good enough for finocchiona or other second rate meats which were then highly spiced with black peppercorns, salt, crushed garlic, coriander, cinnamon, cloves and flavoured with alkermes.
