Marzuolo - March White Truffle
The white truffle of the coast has a smooth skin of a tawny colour and a pale inside that varies from tawny to a purple-brown with numerous veins.
It is usually very small and is seldom larger than a hen’s egg. Its smell is similar to that of garlic.
Truffles are dug up with the help of specially trained dogs and a particular tool, a hoe.
Truffles can be kept in a refrigerator in sealed containers.
