Garfagnana Emmer Wheat
Emmer wheat, or spelt, is an ancient cereal and was a favourite of the Romans who used to give it to their legions.
It has disappeared almost everywhere but it has survived in Garfagnana where it is still husked in ancient stone mills and is regularly used to make excellent soups and spicy cakes.
With today’s trend towards natural ingredients and a vegetarian or macrobiotic diet, emmer wheat has reappeared and is now more widely known.
For this specific use the emmer wheat from Garfagnana has qualities that are not found in that from other areas.
The typical Garfagnana farro soup, apart from being very good, is a real health food.
