Artichoke hearts in Olive Oil

 

The artichokes preserved in olive oil are small, about the size and shape of a walnut.
They vary in colour from pale to greenish yellow.
Always soft, they have a smooth flavour with a slightly bitter after taste.
They are conserved in glass jars and covered in olive oil.
The best artichokes in olive oil are from the provinces of Grosseto, Siena and Livorno.
