Naked Ravioli
Gnudi are tortelli made of only the filling without the pasta wrapping.
They are spherical and green, being made with spinach.
They taste of fresh pasta, spinach and Tuscan percorino cheese and are made all year round.
The special nature of the gnudi is that they are ravioli without pasta.
The recipe has been passed down the generations and uses mostly local ingredients – ricotta, spinach and pecorino.
Gnudi are typical of the provinces of Siena and Grosseto.
