Salted Rustic Crèpe also called Ciaffagnone
This is a sort of rustic crèpe, the typical local carnival dish, made by mixing flour, water, egg and a pinch of salt according to an old local recipe.
They are cooked in lard in long-handled frying pans over improvised braziers.
When it is golden and light it goes wonderfully with the local pecorino cheese, or in an updated version, with sugar.
