In the Casentino there are still people who can remember a dark skinned local breed of pig which lived in the wild or semi-wild, and which has become extinct.
In a 19th century text there is mention of precious prosciutti being shipped to Germany and England.
The local breeders have restored this tradition, starting from experiments on the raw material.
These animals, according to the rules of a rigorous discipline, are bred by traditional methods, in the open where they feed mainly
by grazing in the underbrush of oaks and chestnuts, with an integration of natural vegetable products.
