The olive oil of Fattoria di Morello, situated in a lovely spot north of Florence, near the village of Sesto Fiorentino, is usually made around November and comes from four varieties of olive trees: Frantoio, Moraiolo, Leccino and Pendolino.
The Moraiolo variety, which makes up approximately 80% of the entire production, gives the olive oil a slightly spicy taste, a yellow color with deep green hues, and fresh aromas recalling apples and almonds.
