Not far from San Gimignano, surrounded by the wonderful ‘Senese’ countryside, near the San Gimignano towers and the Volterra Maschio (fortress), you find Fattoria Brentine home to the Caseificio Pinzani.

The idea of a craft transmitted from generation to generation through the centuries fascinates Guido Pinzani. The passion that prompted him to set up the Caseificio Pinzani came of a chance meeting with a retired cheese maker.

Great cheeses are made by skilled artisans from raw sheep’s milk. Latte crudo (raw milk) is the technical description for the preparation of the milk before it goes into the cheese making production). The cheeses they make include Pecorino Classico, Marzolino delle Crete, Pecorino Nero, Pecorino al Pepe, Pecorino allo zafferano and Pecorino al Tartufo (which combines the unmistakable taste of the white and black truffles to a firmer and more compact paste), all of which stem from the original recipes of the Sienese shepherds and from the inspiration of expert cheese-makers.

You can visit the factory on request and take part in the process of cheese creation. Guido Pinzani the owner and his daughter Giulia will let you in on all the secrets of his cheese and will lead you on a tour of his dairy’s specialities. In their beautiful shop, you can taste and buy their specialities and also some other products highly selected by them producted by some of the best producers of our land.
